Bob’s cod in Charmoula sauce

I sit on the board of a local association dedicated to keeping our local ponds healthy, thriving, and accessible, and Bob is one of my fellow board-members.  He’s also a commercial fisherman, and he showed up at last night’s meeting with beautifully fresh cod fillets, caught that day.  He gave me two of them. 

We ate the first one tonight, roasted with potatoes, sauteed peppers, and a spicy Moroccan sauce called Charmoula.  The recipe came from Epicurious, and it was very good.   I’m going to try it again, and make some modifications.  When it’s what I want it to be, I’ll post my version.
