It is predominently made as a 'soft' drink but I am sure with a little refinement you may have something a little more interesting. It is a little more 'bitter' but the principle is effectively the same without the scarey scientific stuff!

Hiya,

Yo may wish to try an alternative to your root beer that we have in the UK – Dandelion and Burdock! (And I just posted the scungilli, so you can read about my fascinating adventures with gastropods.)Jim -- Thanks for the tip. I'm very glad to have readers who know things!

Dianne — I will, at some point, steel myself to try this again, and I will hit up Todd Marcus. You can then enjoy the root beer at your leisure.

if you put the root beer in the fridge once the yeast have some time to carbonate it (3 or 4 days?), you’ll force the yeast into dormancy (or at least a torpor), which will stop the fermentation (or at least slow it down considerably). He has successfully made root beer, so you can be sure of the beer part of the equation, but not so sure of the root part. Give him a call. Tell him I sent you.

Where Naughton errs (in the piece I readd, at least) is not considering the many, many (necessarily smaller) randomized controlled studies that show a correlation between saturated fat intake and increased heart disease risk.

You’re right that we’re not going to resolve it here, so I won’t go into the difficulties of extracting nutritional truths from epidemiological data. Incidentally, I found Taubes's book highly persuasive. Have you read it? If so, I would be curious where you think he errs.

We’re not going to resolve this dispute here, but I will point out, first, that the government’s nutritional guidelines were for a long time (and may still be) based largely on the work of Ancel Keys, and second, that the Framingham study, which everybody cites, supports Naughton’s view, not CSPI’s.
